Before you do the cooking of beets, it has to be cleaned. Wash them and trim the ends first. Keep them in a pan and add some water so that you get some steam when cooking. Roast them at 425 deg F for about ½ an hour to ¾ of an hour. Remove the skin and then you can slice them up or dice it up. If you are going to boil it, you can do so for up to a maximum of 30 minutes. You can see if it is cooked by piercing a knife into it. If it is easy to pierce then it is cooked. In a microwave oven you can cook for 8 to 15 minutes. Once the beets are cooked you can add some sweet onion, hard-boiled egg pieces, and parsley to make a good salad. You can also cook the beet greens separate as you would cook other greens and eat them also. You can mix beets with other vegetables to eat. To eat them separately, you can mix it with some vinegar and sugar or mix it with boiled cornstarch and sugar.
